Main Ingredients
- 8 tomatoes medium size
- 2 sticks celery
- 3 cloves garlic
- 1 onion
- 500 ml vegetable stock
- 2 tbsp butter
- 1 tbsp sugar
- 250 ml double cream
- basil fresh or dry

Instructions
- Chop all the vegetables roughly. Add butter to a pot, then garlic, celery and onion. Fry for 5 min. Then add tomatoes, sugar, and dry basil and cook for further 5 min. Then add vegetable stock and simmer the soup for 10 more min.
- Place soup into blender, then add soya protein and oat fibre and blitz for 5 min. At the end add double cream and blitz again. Serve and enjoy with crusty bread!
